Almondigas

Ingredients:

3/4 cup ground pork
1/2 cup ground prawns
1 egg, medium
1 onion, chopped
1 head of garlic
1/4 cup chopped green onion
1/2 cup misua or fine noodles (Vermicelli)
fish sauce to taste
prawn extract
white ground pepper to taste

Preparation:

Make a mixture of ground prawns, pork, green onion, egg and seasonings. Shape into small balls. Add flour or cornstarch if necessary.

In a casserole, sauté garlic and onion and add prawn extract with about 3 cups of water.

When the mixture boils, drop the meat balls in, one by one.

Add fine noodles when the meat balls are cooked.

Remove from fire and season with fish sauce and pepper to taste.

Garnish with chopped green onion.

Serve hot in a soup tureen

Mushroom with crab meat stuffing

Serves 4

INGREDIENTS:

large mushrooms
small onion
1 large can crab meat
1/8 pint brandy
butter or margarine
water

PROCEDURE:

1. Break off the stems of the mushroom

2. Sauté the finely chopped onion in the butter or margarine

3. Add crab meat

4. Make a well in the middle of the frying pan and add the brandy

5. Blend it into the crab meat mixture

6. Stuff mixture into the mushroom caps and set them in an open pan

7. Pour 1/4 inch water in the pan and bake in a moderate oven for 10 minutes

Tuna Balls

Serves 4

INGREDIENTS:

medium size can tuna
8oz mashed potato
eggs
browned breadcrumbs
salt and pepper

PROCEDURE:

1. Mix tuna, potato and seasoning with one egg into a paste

2. Form into balls and roll in the second egg and browned breadcrumbs

3. Fry in oil for 10 minutes

4. Serve with sweet and sour sauce
